Avocado Chicken Wraps & Quick and Nutritious Lunch

These avocado chicken wraps are packed with lean protein and healthy fats for a quick, wholesome lunch. The wrap is filled with avocado and chicken. There is a side of salad with a dressing.  Ready in just 15 minutes with gluten-free and vegan substitutions.

Ingredients:

  • 2 whole-grain tortillas
  • 1 ripe avocado, mashed
  • 1 cup cooked chicken breast, shredded
  • ½ cup spinach leaves
  • 1 small carrot, grated
  • ¼ cup hummus
  • 1 tsp lime juice
  • Salt and pepper to taste

Instructions:

  1. Spread the mashed avocado evenly over each tortilla.
  2. Add shredded chicken, spinach leaves, and grated carrot.
  3. Drizzle lime juice over the filling and season with salt and pepper.
  4. Roll up the tortillas tightly and slice in half.

Substitutions:

  • For gluten-free: Use gluten-free tortillas.
  • For vegan: Substitute the chicken with grilled tofu or chickpeas.
