This bowl of Mediterranean quinoa salad is quick and easy. The salad is a mix of quinoa, cherry tomatoes, cucumbers, red onions, black olives, and fresh herbs. It is topped with feta cheese and drizzled with a lemon and olive oil dressing.

Ingredients:

  • 1 cup quinoa (cooked)
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup Kalamata olives, pitted and sliced
  • ¼ cup feta cheese (omit for vegan)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine the diced cucumber, bell pepper, tomatoes, and olives.
  3. Add the cooled quinoa to the vegetable mixture.
  4. Drizzle olive oil and lemon juice over the salad, then season with salt and pepper.
  5. Mix well and garnish with parsley and feta cheese if desired.
