Avocado Toast with a Poached Egg

Ingredients:

  • 1 slice whole grain bread (or gluten-free bread)
  • ½ avocado, mashed
  • 1 egg

Instructions:

  1. Toast the bread.
  2. Mash the avocado with a fork, season with salt and pepper, and spread it over the toast.
  3. Poach the egg: Boil water in a small pot, then crack an egg into the water and cook for 3-4 minutes.
  4. Place the poached egg on top of the avocado toast.
  5. Sprinkle with chili flakes, if desired.

Tip: For a vegan version, skip the egg and top the toast with sliced tomatoes or tofu scramble.
